After what feels like the hottest summer of eating, we decided to treat ourselves to something absolutely decadent that also happens to channel how we feel after a day in the sun: Yauatcha's black truffle roast duck. There are two extremes of Chinese cuisine, take-out and take-hauteand this dish captures the pinnacle of haute dining in one bite.
Shavings of aromatic black truffles weave their way between the layers of luscious duck breast and impossibly crisp skin while infusing their earthy umami essence in every bite. This is no orange chicken, but rather an indulgence at lunch or dinner for $68 a plate. While it is rather small, the rich and fatty duck coated with the nearly overwhelming flavor of truffle will have you forgetting that its size ever mattered.
On the contrary, pastry chef Vivian Wu's cassis grand macaron ($12) dwarfs any we've seen around. This queen of macs, violet as if to represent her royal status, sandwiches a slightly tart cassis berry compote and mousse center with beads of creamy vanilla cremeux between two large macaron cookies. What looks to be a super sweet dessert, served a la mode with vanilla bean gelato, ends up being the light, gentle finish we needed to contrast the rich duck.
